Brisket Timeline

Step 1 — Set your alarm

This is your drop-dead alarm time. Set it tonight before bed.

Step 2 — Light the fire

Smoker up to temp, meat seasoned and loaded. You're on the clock.

Step 3 — The stall (don't panic)

Internal temp will plateau. This is moisture evaporating — totally normal. Do not open the lid.

Step 4 — Wrap

Butcher paper, tight. Add a knob of beef tallow. This powers through the stall.

~165°F internal

Step 5 — Pull temp target

Probe it — not the clock. When it goes in and out like softened butter, it's done.

Step 6 — Off the smoker + rest

Wrap in towels and into a dry cooler. This rest is non-negotiable — it's finishing the cook.

Eat

Slice the flat against the grain. Serve immediately.
